Error and Access logs

Is there a way to not have apache create error/access logs?

I don't think you can actually turn the log files 'off', however you can exercise quite a lot of control over what is reported in them to either limit their size or only report specific information. The documentation for apache log files is quite good. I suggest having a read. Site (for apache 2.1) is as follows.
