MySQL and phpmyadmin charset

I need some help with removing the charset and collation specially in phpmyadmin. Is there a easy way to do this. If i remember correctly, there was an explanation somewhere on the internet, but i can't find that site anymore. I really need to get rid of this feature, because this collation and charset this keeps on messing up my databases all the time.
