Ever heard the saying "more than one way to skin a cat"? Same thing. You can define custom error pages and just use the empty page with no issues. You could do one file and then define all the errors to point to that one page if you wish.

In fact, if you just want to customize or get rid of the bottom part, you can look in /xampp/apache/error/include/bottom.html

Same with the top part in top.html

Ok my friend, I'm in the bottom.html file.

I wonder, now, what I have to do in this file to hide those apache information in case of error?

You could remove the <address> section.

Hi mate :)

I removed as you told me, I restarted xampp and it did not work, see below:
I purposely typed the wrong address and the page returned this error:

I'm not sure what your problem with it might be. To test, I just removed this section from the bottom.html:

  <a href="/"><!--#echo var="SERVER_NAME" --></a><br />
  <span><!--#echo var="SERVER_SOFTWARE" --></span>
</address>

Maybe your changes to the other error pages may be the problem. That is probably where your internal server error (500) is coming from. You should revert all your changes and just start with the bottom.html

You really MUST NOT go online with Xampp due to your completely missing skills, it is unsafe and not recommended. Dont wonder when your server maybe hacked in future.

Thanks for the tips of all but, as this server is not pubic, I prefer to close a VPN connection to access my internal servers with xampp than use redirection (nat and pat).
