What is the proper way of upgrading php and mysql verison on XAMPP Macbook without changing any config files (or vhosts).

There is neither an Upgrade for Xampp, nor an Upgrade for PHP/MySQL as part of Xampp. Only full installation (after full deinstallation).

You cannot upgrade Xampp.

The only way for getting a new version is a full deinstallation followed by a full installation of the new version.

But Nobbie, getting a full installation of the new version is not an option since it doesn't run on most osX versions (only the newer ones). So if someone with osX tiger / leopard / snow leopard needs a PHP version higher than 5.3.1 (for Symfony, or mediawiki, or...) the only option seems to be 1.7.3 and a way to update the php version.

Yes, maybe. But I am a simple User of this forum as yourself and I am not an developer of Xampp and i simply answered the question. If you are unsatisfied and/or have serious problems, contact the development team.

Either go for a newer OSX Version or use a different OS, if there is no other option. I recommend to run a Linux based server anyway.

You could always try installing apache, php, mysql, and phpmyadmin individually into OS X
