Man kann natürlich nicht pro Domain Apache mit anderer UserId laufen lassen. Dann müsstest Du pro Domain einen eigenen Apache starten, was natürlich Blödsinn ist.
Ich weiß zwar nicht, wozu ich ins Verzeichnis /etc/apache2 schauen sollte, aber vielleicht erfahre ich es ja noch. Darin ist jedenfalls folgendes:

Dass es mit der UserId nicht geht, ist klar. Ich hatte gehofft, dass man z.B. in der conf-Datei der Domain feslegen kann, mit welchen Rechten die log-Datei gespeichert wird. Aktuell steht da
