How To Create Sub-Domains

How do you create sub-domains? I know how to, but not on a Macintosh!

e.g. play.localhost, game.localhost, server.localhost etc. etc..

Being new to XAMMP coming from MAMP Pro, can you explain how you did get to setup Sub-Domains? Even just a quick blurb on how you set it up locally would be great and highly appreciated.
