I would to upgrade to the latest 8.0.3

Is there a tutorial to walk me through the steps other than searching YouTube?

Neither nor. Xampp does not support upgrades, you can only do a full de- install followed by a full install, accompanied with appropriate backup and restore of your own data. It is safe to have a full backup of the Xampp folder anyway.
