You cannot update Apache in Xampp. That is one of the disadvantages using Xampp, there is no upgrade procedure. Dont use Xampp if you prefer to upgrade Apache on your own. Or wait until Bitnami releases Xampp with the matching Apache release.

Okay, because I'm using the latest Xampp and the Apache service desides to stop on it own and I have to restart the service

How do I find out what version I am currently running? Can I not just install Apache into the Xampp Apache folder to upgrade it?

As already mentioned, we do not actively support any single component upgrade guides.
Technically nearly everything is possible. It all depends on your own knowledge and experiences.
