I need to get a version of XAMPP that includes MySQL server versions from 5.5 onwards.
Does anyone know where I can fine this at?

All versions released between 2011-01-22 and 2015-08-27 fits your requirements.
Later versions contains MariaDB instead of MySQL and earlier versions contains MySQL 5.1 or prior.

Where do I look for the MySQL server version that XAMPP is using?

There is no complete version history table. For the early versions you can use this table i created long time ago:

So there is no place on the Xampp software to check it?

Each specific XAMPP version does have a readme file containing the version numbers of the installed XAMPP version
