I am using XAMPP 32 bit versions on my Windows 64 bit operating systems for nears. That works pretty well.
There are always reasons for (not) doing something. The main reasons are very sure that Apache don't provides an official 64 bit compilation for Windows and PHP releases 64 bit compilations for Windows just a short time.
Unlike on Linux you will not really get a benefit from using 64 bit versions on windows. Xou can address more ram. But these versions are reported to be slower than the 32 bit version, you will find much less extensions and modules for 64 bit, etc. IMHO it is not worth to use a 64 bit AMP Stack on Windows.
