I am unable to use Ithemes "importbuddy" to successfully migrate my site from the desktop to the web
Ithemes support have gven me the following advice:
"You can try setting mime type for ejs on the server as text/html"
Are you able to tell a novice how to achieve this

If I understand you correct you are trying to export a Wordpress installation on your local host and import it using importbuddy on your webspace. Correct so far?
Now where in this process do you have troubles? On your local installation or on your webspace.
And what the heck is ejs? The only thing I found on the internet is some javascript templating system (Why the hell would someone even think of using something like that...)

yes,
I created a backup of a local install using backupbuddy and tried to migrate it to my bluehost server using importbuddy - it failed at step 3
I then tried restoring it to another, new, local site - failed again
I'm using XAMPP locally

I still don't know what ejs is and I cannot support you on ImportBuddy itself as it is a paid software product. For Problems with your webspace (I really hope you are not running your on server) please contact your provider.
