Redirect all outgoing emails

Hi,

I am debugging a already created php system. I have the website on my local xampp for testing and there are pages that have forms that send emails to users in a database. I have Mercury Mail setup and it works just find. I would like when the php mail() is called it sends to a testing email instead of the intended recipient?

I did find this post on another forum http://www.webmasterworld.com/forum88/11354.htm. This person is doing exactly what I want to do but he doesn't give detailed instructions and I am not sure how to apply this to xampp.
