Uninstall

I lost all of my usernames and passwords for xampp to access phpmyadmin, and before the localhost, which I figured out how to bypasss thanks to a forum member here. Is there a way to capture or change the password to log into the phpmyadmin? I went into security in the xampp area and that still prompts for a user and password too.
Next, I can not find where to uninstall the xampp. I was thinking of installing it again thereafter and starting over essentially.
