I have been developing my site on it just fine .. but

Just how do I start phpMyAdmin ?

When I type in http://localhost/phpMyAdmin/ it should start right ?

No because most things in XAMPP are case sensitive so try:
http://localhost/phpmyadmin/

The Alias for phpMyAdmin is located in \xampp\apache\conf\extra\httpd-xampp.conf file near line 98 and it will show you the correct case to use.
httpd-xampp.conf wrote: Alias /phpmyadmin "C:/xampp/phpMyAdmin/"
<Directory "C:/xampp/phpMyAdmin">
AllowOverride AuthConfig
</Directory>

Tip to help save confusion, make everything including folder and file names all lower case when developing in XAMPP.

Good luck. :)
