I have successfully installed XAMPP and can log in to localhost.

I am trying to install a ZEN shopping cart and get error messages from the installation. While the messages appear to be from ZEN, the Zen Board folks seem to think it is an Apache problem. Can someone here advise?

The error message I get says: "Access denied for user 'encoreep_zc1'@'localhost' (using password: YES)" There seems to be no place to enter any password so everyone is a bit confused.

I also get the following error message, but again not sure if it is ZEN or Apache: "/admin/includes/configure.php does not exist" Where is it supposed to exist at?

This is a MySQL error Message.
In your installation steps of ZEN cart, you had to be asked for your MySQL-Data (Host, username, passwort), or these Data have to be given in a config file (read the ZEN cart installation documentation, i don't know ZEN cart).
This Data isn't correct. MySQL can't connect with this user/password combination. I don't know where the user encoreep_zx1 and the password for this comes from. If you defined them, have you defined this Username/password combination in MySQL, too?

I don't know on which time ZEN cart create this file or if you had to create (copy from a dummy config file) it by yourself. Read the ZEN cart documentation.

btw: This is the german part of the board. Next time take some time to read the forum descriptions and categories to see, where your post is correct!
