I'm a total PHP noob, im trying to start learning PHP-GTK, but I'm failing at the installation.
Are there any good tutorials on how to install php-gtk on xampp?

No, because you can't install php-gtk on xampp.

php-gtk is always a separate installation and not related to a PHP installation which is part of a webserver setup. Thus you should look on the php-gtk homepage for an installation instruction for your OS.
