Apache/MySQL quits working after 3-4 days

Something is crashing, and I'm not sure what. I've got XAMPP 1.71 set up on a Windows 2000 server, only running Apache and MySQL. The installation was a breeze, and most times it works perfectly. But after about 3-4 days of running solid, something stops working, and I get the message "Unable to connect to MySQL" When that happens, all network resources for the machine cease to work. Trying to bring up any application tells me that there is "Not enough quota" and to "free up system resources." If I kill the apache and mysql processes via Task Manager, then bring them back up via XAMPP, it works fine, and stays fine for another 3-4 days.

I should also mention that there is no anti-virus software on this machine, nor backup software running on it either. Can someone give me a hand?
