FileZilla Server Wiki etc can be found here:
http://filezilla-project.org/wiki/index.php/Main_Page

When you have started FileZilla in the control panel and it's running, clicking on Admin will open a window for you to setup your FTP server.
Under Edit you will see a menu for Settings and 2 other items.

Clicking on Settings brings up a window you use to change the settings.
Each setting has helpful text prompts next to it that are usually all you need to get started.
xampp\FileZillaFTP\FileZilla Server Interface.exe
will get you the Admin Interface, usually without starting the FTP server.
The user/pass can be found here:
xampp\readme_en.txt
Should be changed to enhance your security.

I prefer the free hMailServer for ease of setting up over MercuryMail that is included in the XAMPP distribution:
http://www.hmailserver.com/

MercuryMail help with setup can be found here:
xampp\MercuryMail\setup.hlp

An old Beginners Guide To XAMPP can be found here:

Take a look at the new DeskTopXampp launch control posted by ridgewood:

The DeskTopXampp launch control for XAMPP and XAMPPlite (DTX.exe)
is available here:
http://zedfiles.com/DTX/

I highly recommend DTX.
