You can use RoundCube in place of Squirrel which is difficult to configure for the uninitiated:

There are many post on this forum on how-to configure MercuryMail. Once it is configured correctly you would add the details that RoundCube or Squirrel would require.

Google is also your friend in these matters. You will need to do some reading to try and understand what is required. When you have got things up and running and you have problems with the XAMPP implementation of these modules then post back and we can take this further.

Also you are not limited to using Mercury Mail, you could use any of a bunch of mail exchangers.
One that comes to mind is hMailServer a free, open source e-mail server for Microsoft Windows.

Did you vote for a simpler E-mail module for XAMPP?
