Changing a DB's encoding

I have an existing DB (one out of a number) I want to change it's encoding to fit for a Hebrew website.
Encoding is either UTF or Hebrew specific.
I also have other DB on that server I want to remain in their default encoding.
What do I do to solve this? How do I change an existing DB's encoding?
